Summer salad with lemon vinaigrette
Ingredients for two persons
100 grams soft goat cheese 100 grams blackberries
60 grams corn salad
50 grams of pecans
1 red leave
Half a cucumber
Ingredients for the lemon vinaigrette
3 tablespoons extra virgin olive oil
1 tablespoon Agropošta lemon syrup 1 teaspoon white wine vinegar
1 teaspoon Dijon mustard
Pepper and salt
Preparation
Start by making the lemon vinaigrette. To do this, mix the lemon syrup with the white wine vinegar and mustard. Gradually whisk in the olive oil until the vinaigrette is bound. Season the vinaigrette with salt and pepper.
Using a cheese slicer, make long strands of the cucumber. Cut off the underside of the red-leaf end, then pick off the leaves one by one. Toast the pecans in a dry skillet and then let them cool before coarsely chopping them.
Divide the corn salad, cucumber slices and red-leaf leaves between two plates. Crumble the soft goat cheese over this and distribute the blackberries over the salad. Drizzle the salad with the lemon vinaigrette and garnish with the coarsely chopped pecans.
